Brining
The difference between Brining and Marinade: A brine uses salt and osmosis to exchange the moisture in the meat with the brine. A marinade is an acidic mix which breaks down the texture of the meat .
The most basic brine is made of salt, sugar, and water. Dissolve the salt, sugar in your water and soak your chicken pieces in it for a couple of hours in the fridge before you cook it.
